Recipe Challenge Update
The results are now in from our Recipe Challenge to find the best healthy and delicious recipes. The University Caterer recently ran a feature on the competition and judging has now finished. The standard of entries was extremely high but there were a couple of clear winners:
Best individual entry goes to Ralf Heck, The University of Edinburgh
Best team entry goes to The University of Edinburgh
There were admirable efforts from other institutions too, but in the end the Edinburgh chefs’ experience (they were after all the first university to gain Food for the Brain accreditation) – not to mention competitive natures – shone through. Many congratulations to Ralf and to the rest of the team.
While the competition may be closed, the purpose of the exercise was in fact to bring together a collection of tried and tested recipes that fit Food for the Brain standards, to offer nutritional value as well as great taste. The entries are available to view here and you can enter new ones at any time, so that the recipe database continues to grow and becomes a useful resource for any chefs wanting inspiration for healthy meal ideas. Here is a summary of what to look for or focus on in a recipe, whether you are choosing one or creating one from scratch:
- Whole grains like brown rice, oats or wholemeal flour
- Oily fish
- Nuts and seeds
- Fresh fruit and vegetables
- Adequate protein provision (see the attached guide for more information)
- Suitability for special diets (such as wheat or dairy free)
- Avoidance of artificial additives and preservatives (such as MSG, E numbers and hydrogenated fats)
