English Heritage is the Government’s statutory adviser on the historic environment. English Heritage is funded partly by Government and partly from revenue earned from its historic properties and other services. English Heritage wanted to return control to any venue catering operation that were visited by more than 50,000 visitors per annum.
Russell Partnership Collection’s services supported the development of the client’s own catering team and application of key delivery standards within operating locations. We were commissioned to develop a format that would be utilised across regions in order to standardise the quality of service. This included the complete food specification from cutlery through to the development of training manuals and the recruitment of staff. One of the key factors was to highlight the use of local produce and the benefit to the community. English Heritage have utilised a range of Russell Partnership Collection’s consultancy services, including benchmarking, business re-engineering, design, operational training, event planning support and operational mobilisation across their estate.
The outcomes of the project were the development and mobilisation of café concepts at Battle Abbey and Dover Castle underpinned by a strategy for local sourcing for each supply chain by location. Supply chains were retained within a 50-mile radius for all English Heritage sites, and interim operational support was provided to the Head of Function and Catering.
