Russell Partnership Consulting was appointed and retained to create and deliver the Food Strategy for London 2012 Olympic Games – at the time, the largest peacetime food operation in the world.
The process involved: evaluating food scale and scope across 100+ locations, identifying food trends, developing over 500 concepts of operation, creating a financial model to forecast revenue and cost by venue, event and day. Data was analysed and utilised to calculate venue allocation for front and back of house space, undertaking national supply chain and service delivery capability, providing industry communication, identifying the procurement approach, supporting venue design and creation of The Food Vision, the first ever Olympic Food Strategy.
